The long green eggplant called Makua Yao (มะเขือยาว) is used in Thai stir-fried dishes including Pad Makua Yao sai Horapah. it is also an ingredient in many soups. It is similar in flavor to other eggplants, so if you can't get the green ones, you can use the long purple eggplant, or any other as a substitute.
