Yellow Curry Paste

Yellow curry is one of three major kinds of Thai curry that are commonly found in Thai restaurants in the West. There are other curry types in Thai cuisine, several of which are yellow. Thai yellow curry is made with roasted cumin and coriander seeds, cloves, garlic, shallots, coriander root, galangal, lemongrass, and many other spices and flavorings.

You can make your own, or buy packaged Kaeng Kari from an Asian market. When shopping, make sure you are buying curry paste, not a packaged curry sauce that already includes coconut and other ingredients. That is like using canned spaghetti sauce in a recipe for homemade spaghetti sauce. Curry paste is a mixture of herbs spices.
