Sweet and Sour Stir Fried Vegetables

If you like sweet and sour stir fried vegetables, then you'll love this Thai-style recipe that has just a hint of spicy to tie all the flavors together. Ingredients:
  • 1 Cup thinly sliced Carrot
  • 1 Cup Snow Peas
  • 1/2 Brown or Yellow Onion
  • 1/2 Tomato
  • 1 Cup Cucumber
  • 1/2 Cup Straw Mushroom
  • 1 Thai Long Chili
  • 3 - 4 large cloves Garlic
  • 1/4 teaspoon finely ground White Pepper
  • 1/4 teaspoon Sugar
  • 1 Tablespoon Light Soy Sauce
  • 1 Tablespoon Fish Sauce
  • 1/2 Tablespoon Oyster Sauce
  • 1 Tablespoon Sweet and Spicy Dipping Sauce
  • 1 Tablespoon Distilled White Vinegar
  • 1 Tablespoon Vegetable Oil

Basic Directions:

1) Heat oil in a deep frying pan or wok. Add the garlic and let it cook for just a few seconds.

2) Add the onion and let it cook for a little bit, then add the carrot. Cook for 2 minutes.

3) Add the mushrooms and continue cooking until they get soft.

4) Add the white pepper, sugar, all the sauces, and the vinegar to the pan. Sir it up well, then let it cook up until the liquid starts to look rich and a nice caramel color.

5) Add the snow peas and sweet red chili. Mix and stir for about 30 seconds.

6) Add the tomato and cucumber. Turn off the heat and stir until the pan cools. Serve immediately.
